Keeping Avocados in your diet

Okay, it’s almost February. So maybe you’re still going strong on your health goals, or maybe you’ve gotten a little discouraged. You’ve got this. Tone physiques and healthy diets are lifelong endeavors, not overnight successes. I’m not going to lie, I’m having a really hard time sticking with my goals right now. My friend had an ice cream bar at her party last night, who can resist that?! That is probably my biggest weakness. Anyway, I just wanted to take a minute to encourage you if you are struggling with a New Year’s resolution and talk about one of my favorite superfoods, the avocado.

A few years ago I would literally refuse to eat an avocado. I thought they tasted like dirt. Jury’s still out on that, but I’ve definitely grown to love eating them! I’m so glad I finally came around because avocados are so soooo good for you! They are one of the healthiest fruits on the planet, and unlike any other fruit they are super high in fat. 77% of an avocado’s calories are from fat. I know what you may be thinking, “I’m trying to avoid fat!” But hear me out. The fat found in avocados is called oleic acid, and is a monounsaturated fatty acid that is extremely good for your heart. The fat content also helps you absorb more of the nutrients when eating other plant based food. Some veggies have fat-soluble nutrients, which means they have to be combined with fat in order to be absorbed by your body. So eating avocados on a salad is a great way to get the most out of it!

Studies have also shown that eating an avocado with a meal can help you feel more satisfied and cut cravings after your meal. And if that’s not enough, they are also high in fiber and low in carbs which helps aid in weight loss.

EASY MEXICAN GUACAMOLE


3 ripe avocados

1/4 of a red onion, diced

1 roma tomato, diced

1/4 cup cilantro chopped

1 jalapeno, diced finely

1/2 tsp salt

1 Tbs fresh lime juice

1.) Half all of your avocados using a knife and remove the pits.

2.) Gently peel off the outer shells, dice and place in a large bowl.

3.) Using a fork, or other utensil (I used a spatula for some of it), mash your avocados until there are only a few chunks left.

4.) Add the remaining ingredients to your bowl and mix until well combined.

5.) Garnish with whole cilantro leaves, if you want, and serve with veggies or chips! I personally think that it tastes amazing with either pita chips or those pretzel crisps.
